Thing Thirty-Eight: White Bean Spread
Jun. 23rd, 2013 02:19 pmYesterday, coming home from visiting my friends and their new baby, I realized I was starving for lunch. Racking my brains to think of something I could make with what I had, I came up with the idea of a white bean spread to have on my fresh-baked bread.
I based it on a Weight Watchers recipe, but seasoned it in my own way. Here it is:
One can white beans (cannellini. Navy, etc.), rinsed and drained. 2 cloves garlic, smashed. A couple tablespoons of chopped onion. A tablespoon of olive oil. A tablespoon of water. Two teaspoons of lemon juice. A dash of salt, and another of pepper. Some rosemary and thyme, fresh from the garden. Whiz in food processor until creamy.
This creamy, light spread is so deliciously garlicky and flavorful! It's seriously addictive stuff. The herbs really add a nice complexity of flavor, too. Yum! I had it for lunch again today. I highly recommend it.
