While everyone else is saying a last goodbye to summer, I am happily cooking away like mad today. First up was a batch of pesto. A
big batch of pesto. I still have a ton of basil left in the garden, but jeez, there was no more room in the blender! That got separated into small containers and frozen, to be given away to friends in a couple weeks. I think they'll like it. It's pretty damn good.
Next I made a sort of crabmeat salad, which I will use to top a couple avocado halves tonight for a first course. Main course will be Thai lettuce wraps, with chicken, cucumber, carrot, and rice noodles rolled in lettuce and dipped in a peanutty sauce. I wanted to do something kind of special for
pierceheart, since he cooked a divine etoufee for me last night! I didn't even know he was planning on cooking; I just walked in the door and it was almost done! Yum.
I'll have to see what I can pre-cook for the main course, now, to save some time when the boy gets home.
All this is after making a very tasty dilled tuna salad for my breakfast/lunch, eaten on toast with gherkins on the side and a luscious, perfectly ripe peach for afters.
I am such a foodie.
