Is chicken with red and green peppers and eggplant in an herbed tomato sauce (basil, oregano, tarragon, garlic, and more garlic) over whole wheat rotini.

Mmmmmm.

We are a good team in the kitchen.

If I were making this again, I'd add chopped Kalamata olives, and roast the peppers first.

so, that over whole wheat rotini makes the rotini taste good? 'cause last time i had wheat pasta, recently, penne pasta, it was HORRIBLE. i threw it out, it was so icky. i put homemade tomato sauce and vegan parmesan on it, and it was blech.

Weird. I like the whole wheat pasta. It's not low-carb or anything, just whole wheat. Nummy, IMO.

One of the things about whole wheat in general is that it will go rancid faster than other wheat products due to the wheat germ being present.

so, if it sits on the shelf in the store for a while, i buy it, and it sits on my shelf for a while, perhaps it has gone rancid? hmmm. it didn't taste foul, it was more of a mouth-feel issue. i do get those w/ numerous foods though - i like the flavor of apple pie, but i HATE the texture of cooked apples, so i usually refuse apple pie.

It's probably not rancid, unless it was fresh pasta. But it does have a slightly different texture. Not too different though, I think.

The texture is just the nature of the grain ;)

I know someone who hates pears for the "sandy" texture.

I am allergic to apple juice, so I tend to also avoid apples.

Do you want one for a salad with chicken on it, or a chicken salad sandwich filling? I don't have "recipes" so much as "ideas".

Curry can be good in the sandwich filling. So can tarragon, balsamic vinegar, grapes, celery, and apples. So can chipotle and garlic.

For the topped green salad, honey mustard dressing with a little bacon, cherry tomatos, and onion is good. So is a Mexican-marinated chicken with sweet corn, onions, peppers, and chili-lime dressing. Or you could cook the chicken in a buffalo sauce, add veggies of your choice, and blue cheese dressing.

I'm trying to come up with a healthy chicken salad sandwich sort of thing that I can make for tomorrow night.

I'm thinking of braising the chicken breasts in something, with herbs and spices.
