Dec. 2nd, 2005 11:26 amLast night, inspired by the gastronomical delight described by
sororbabylon, I had to make myself some curried pumpkin soup. I didn't use a recipe, just created one. Here it is if you're interested. It may go through other incarnations in future.
1/2 large sweet onion
1 nice big carrot
olive oil
1 (smaller size, not huge size) can pumpkin puree (NOT pie filling)
1 1/2 cans chicken broth (or veggie broth, I used fat-free chicken broth)
curry powder
garam masala
ground cloves
salt
Chop onion and carrot and sautee in olive oil (I used maybe a tablespoon) until nearly soft. Add spices to taste and cook until the smell is making you drool and the veggies are quite soft. Add pumpkin and broth and salt to taste. Simmer until you're too hungry to wait much longer for dinner. Eat with joy. This is a thick and filling soup, and will make you very happy on a cold night.
I may do this adding lamb at some point. Mmmm, pumpkin and lamb.
This weekend I'm getting my holiday cards together. I also intend to buy a few items of clothing, and some presents for people. I also want to get more resumes out and cook with
