Doing stuff with leftovers
Feb. 17th, 2007 06:40 pmOk, so I impressed myself tonight. :) I made a salad from some leftover bagged baby spinach, some celery, onion, chopped apple, diced avocado, and warmed leftover duck from Locke-Ober with a dijon, cider vinegar, honey, and low-fat mayo dressing. Nummy. That was probably the most satisfying salad I've ever made. I froze the other avocado half. Hope that works out well.

I am getting much better at truffles, I made 2lb of chocolate truffles yesterday and they were superior to the ones I made valentines day. I even had the nice crisp chocolate shell turn out excellent.
I have vacuum bagged avocado with great success. I bet if one rubbed just a bit of a heavy oil over the cut surface of an avocado it would keep just as well.
