Eggbeater lazy chick's tamagoyaki: can make 1/2 c. worth of Eggbeaters for 1 point!
Bulgur: half or a bit more of top tray = 1 point. Full top or bottom tray = 2 points
"breakfast for lunch" with oatmeal, turkey bacon, fruit, yogurt, bread triangles, cheese, egg...endless possibilities
collard greens with cider vinegar in bottom tray= 0 points
mini-muffins! I could do sweet or savory. Mini cornbread, anyone? Nom.
crab sticks! Louis Kemp = 3 for 1 point. Wow.
mini-meatballs made with turkey or maybe TVP. Must find good recipes.
Could I make bulgur onigiri? Fewer points than rice.
OMG low-fat octodogs! Dare I get that cute? Maybe just cut-up 'dogs. (I got that cute.)
Added:
* tortilla roll-ups of veggies with a tiny bit of low-fat mayo and mustard (1/2 Mission carb balance soft taco size or whole Joseph's low-carb are 1 point each) done as pinwheels
* TJ's veggie meatballs w/ a squirt of KC Masterpiece Classic Blend or a dab of marinara (2 = 1 point)
* Laughing Cow light cheese

I think that if we both know we're trying to lose weight, it might help to keep us from snacking so much, too. "Ooh, I really want to nom some chips. But wait--if I get them out,
I think we should keep more veggies around to nom on, not just salad stuff like I usually have on hand. And maybe start making zero-point soups.

2 cups TVP granules
1 3/4 cup boiling water
Saute in skillet until golden:
2 Tbsp. olive oil
1/2 cup onion, chopped small
garlic, chopped small, as desired
Add the TVP and stir in:
1/2 tsp. chili powder
1/2 tsp. garlic powder (if desired)
1/2 tsp. oregano
1 tsp salt
1 Tbsp. tamari
Mix in:
1/2 cup flour
Mix well and shape int small balls, pressing firmly. When they are made, brown in a little bit of oil or spray in a skillet, rolling over carefully to brown evenly. Then transfer to the over or a small toaster oven and bake at about 350 for around 20 minutes or until cooked throughout.
Serve with pasts and sauce, or in a crusty roll with spaghetti sauce for "Wheatball Sandwiches". I make this recipe and then keep the balls in the fridge for up to 5 days or so, eating them as needed and incorporating them into meals as I go.
