We have a party at work tomorrow, our "after the holidays" party. I decided to bake a Baileys chocolate cheesecake for the occasion. Since I'm going out tonight to see R.U.R., I had to make it last night. That meant I needed to get the ingredients. I went to Trader Joe's on my break. I had an umbrella when I started out from the office. By the time I got there, I had an umbrella handle and a mangled umbrella...canopy? Separate pieces. Yeah. I also got soaked when I stepped where I thought there was a little slush on top of solid ground, but where there ended up being about 6" of slush. I fell, and got wet all over my calves and knees. Gah.

Anyway, the cheesecake turned out to look good but cracked. Damn. I even had a steam pan in the oven. Anyway, I'll make ganache and cover the top. No big deal.

Today's bento is surimi salad, celery, onigiri, and blanched asparagus. Nothing fancy. Breakfast was pretty awesome, though: it was my usual oatmeal with dried cranberries, orange zest, and spices. This time, though, I decided that instead of a tablespoon of chopped nuts, I'd rather have half a cup of fat free Greek yogurt. More protein for the same one point. I decided to top off the cooked oatmeal with it, and it was awesome! Almost like the tarkana I made once, but with oats instead of bulgur. OM NOM NOM.

I dreamed some weird dreams last night: a war that was like watching a movie about a war, my betta building enormous bubble nests, eating leftovers that were in the freezer...a real hodgepodge of dreams.

So, yeah, tonight I'm going to see a play for the first time in ages! Yay! And it's sci-fi! Yay more! And now to work.

How did you make the surimi salad?

Surimi shredded a bit by hand, a little light mayo, and chopped celery.

I bet it would make an excellent celery stuffer! I was also hoping to see if you put some "secret" Penzey's on it.

I am trying to bring healthier things to work so I like reading your posts. Over the holidays, I was eating way too many boxed dinners, cheese, bread and potatoes. Not enough vegggies!

I have been trying to get more "low-prep" veggies that don't need peeling or de-seeding or hardcore washing to be easily edible. Zucchini, asparagus, campari tomatoes, baby carrots, etc. are all good. Having these makes me more likely to eat them. :)

I could have put some celery seed in the surimi, or maybe a little Mural of Flavor. Didn't this time, though. Last time, I added freeze-dried chives.

Cracked cheesecake still taste really good :)

I have been a Margareta cheesecake recipe I have been wanting to make, but have not found the time of late....maybe this will inspire me to find some time :)

I made a margarita pie once, which turned out awesomely. It's a Weight Watchers recipe, but only because light butter is used in the crust and light ice cream is used in the filling. It's easily convertible to non-light, but tasted pretty decadent as written.

Yeah, cracked cheesecake is good, but I figured that if I could cover the Grand Cheesecake Canyon with more chocolate, so much the better. :)
