Holy crap! A high of 40 today and 42 tomorrow! SUPER SWEET! Generally, we get more than 2-3 of those kinds of days during the winter, don't we? This one has been SO cold. But today begins February, and the sun is coming through the clouds, and spring is on the way. (Yeah, yeah, I know it's going to get cold again after tomorrow, but STILL...)

Gonna make some CHOWDAH today! Yay! I haven't made it in ages, and it's perfect for today: warming soupy goodness, but with a decided "summer food" feel to it. Nom.

Clear Broth. *Shudder* Only true chowdah is the cream one.

Didn't say it wasn't good. I actually enjoy it. But it's not Chowder, it's clam soup.

I posted a recipe for it to a WW recipes community on LJ. I throw in a little crushed fennel seed in mine, which gives it just the right kick.

Potatoes are necessary to chowdah. I don't put heavy cream in, but it can be done. I prefer a lighter broth, and if I weren't watching my weight, would use half-and-half along with clam broth. As it is, I tend to use evaporated skim milk or lowfat milk with clam broth.

I am feelin' Spring myself, and it's above freezing here, too. Hurrah! I love me some Boston Clam Chowdah. Any chowder with tomato in it shall not pass my lips.

I am totally stoked about the melting that should accompany this temperature thingie. (But if the groundhog sees his shadow tomorrow, I'm so gunning for his furry little behind. We're talking groundhog curry and fur mittens, bit time.)
