An ekiben is a bento box you get on a train or at a train station, in Japan. Tomorrow, I'm taking the train to Portland for a conference. It leaves at 11 and gets in at 1:30. From there I need to get to the hotel and check in, which means I wouldn't be free to eat until about 2 or later. So, I'll be wanting lunch on the train, and rather than buy something on the train in the snack car, I made myself an ekiben. It is AWESOME. I have mujadara, a sort of pilaf made from bulgur, lentils, and caramelized onions, leftover from dinner tonight. I also have some cucumber spears with zatar seasoning and a few grape tomatoes in that tier of the box. In the other tier, I have a saute of red pepper, carrot, and sugar snap peas, with garlic, a touch of basil pesto, and a few drops of truffle oil. I put a few little tiny triangles of an aged goat cheese on top of that.
Definitely beats whatever pre-made wrap I'd be likely to get at the snack car!
