Very rough recipe for multi-meat meatloaf

1/2 lb. ground lamb
about 1/3 lb. rabbit loin, finely minced
2 duck sausages w/ orange liqueur (about 6 oz. total), removed from skins (you could also use ground duck)
about 1/2 lb. or so of "meatloaf mix": ground beef, pork, and veal
1 egg
1/2 large sweet onion, finely diced or obliterated in food processor
about 2 cloves minced garlic (I used cheater's garlic)
fresh thyme (less than 1 tsp. of separated leaves)
fresh sage (2 leaves, finely minced)
panko breadcrumbs to get sufficient texture
a splort of ketchup
salt
2 slices uncured fruitwood smoked bacon
Combine all ingredients except for bacon. Mix with hands, being careful not to squish too much. Put it into a loaf pan, pat it down, and lay the bacon strips on top. Bake at 375 for about an hour or so, until a thermometer in the center reads 160. I had quite a bit of fat to pour off after this was done. The end product was amazingly flavorful.
