Sep. 28th, 2009 12:48 pmMmm. Bento success! Yesterday, I prepared a half-recipe (it was my first time making it and I wanted to test it) of Maki's black bean vegan miniburgers. Of course, I'm sure no one's surprised that I made substitutions. First off, I didn't have miso, so I used a teaspoon of hoisin and a teaspoon of nutritional yeast and a little water. Second, I didn't have rice flour, so I subbed in some whole wheat flour, which is better for me anyway. I also used pecans instead of walnuts, and adobo spice mix instead of falafel spice mix. So it was a sort of southwestern riff on this dish. In that vein, I used chili-spiked ketchup for the glaze instead of the one they suggest. All in all, I think that if anything, I cut down the calories and upped the fiber. And they were YUMMY!
I also made some salmon onigiri, and had one of those in my bento box. Tasty, even if they were messy to make and slightly misshapen. For some reason, my rice didn't stick together as well as it usually does.
The veggie today was a big ol' mess of stir fried fennel with red bell pepper, fennel seeds, garlic, and crushed red pepper. Hey, it's Italian sausage minus the sausage! :) Tasted great.
Last night's dinner was a nice one: lamb with wine, rosemary, oregano, and garlic; roasted baby red potatoes; and steamed broccoli. It was accompanied by a shared bottle of Ommegang. Mmm.
Tonight is dance class, so I will be eating out. I might do sushi. Mmm, more Japanese rice! And feesh!
