If my shopping excursion is done early enough and doesn't leave me too exhausted, I will make some homemade bread tomorrow! I bought six-grain flour, whole wheat bread flour, and vital wheat gluten at Harvest Co-Op to make it with. I don't know if I'll need the gluten so much if I just use the bread flour, but if I mix it with the six-grain, it's going in!

Making bread is so satisfying.

I make competent bread, though I'm certainly no professional.

I just use King Arthur's basic flour (and whatever other grains suit my fancy) and make sure I don't use unfiltered tap water. (Chlorine and yeast aren't friends).

I generally make competent bread as well. I generally follow the Tassajara Bread Book recipe and use either regular whole wheat flour or a blend of that and regular white flour. I've learned that when including flours other than wheat flour, though, that it can help to add some vital wheat gluten to the mix if you want a really good texture.
