Thing Thirty: Stew
Feb. 24th, 2013 12:20 pmI read a lot of cooking blogs and cookbooks and cooking magazines, but it's only once in a while that I actually print a recipe out and make it. Last night, I did just that. I found a recipe on the Tasty Kitchen site for a sun-dried tomato chicken sausage and white bean stew the other day. Looking through it, it looked very healthy and tasty, so I decided I'd make it sometime soon. I already had a can of cannellini at home, since I'd been craving it. I got another can of those, the sun-dried tomato chicken sausages from Al Fresco, and decided to use the bag of chopped kale I already had at home in place of the baby spinach the recipe called for.
In addition to the spinach-kale swap, I made a few other changes from the recipe. Kale does not cook down quite as much as baby spinach does, or as quickly. I added it sooner, sauteing it for a while before adding in the broth. I also added more broth, since the additional bulk of the kale changed the solids-to-liquids ratio in the stew. I threw in some rosemary along with the thyme, because white beans + rosemary = awesome, and I added some chopped sun-dried tomatoes. The end result was delicious, filling, and very healthy! It was a great meal for a dreary night.
